Type of wine: White, dry, Friulano Friuli Grave.
Producer: Fernando Pighin & Figli S.agr. a r.l.
Grape varieties: Monovarietal Friulian tocai
Zone of production: Fraz. Risano, Pavia di Udine (UD), Italy.
Soil: Moderately loose-packed, with patches of gravel.
Training system: 50% Friuli 50% single Guyot with 4,000 vines per hectare, short pruning which limits grape production, making it more complex and structured.
Yield per hectare: 90 quintals of grapes per hectare.
Harvest: During the period of optimal ripeness, on 14 September.
Vinification: Grapes conditioned at +10° C and vinification without the skins with soft crushing.
Must to fruit ratio: 68%.
Fermentation: In stainless steel vats for 20 days at a controlled temperature of +18° to +22° C.
Ageing: Stored in the cellar at a constant temperature of +12° C, stabilised in refrigeration rooms until bottling.
Alcohol content: 13% by vol.
Residual sugar: 1.5 g/l.
Total acidity: 5.50 g/l in tartaric acid.
Colour: Clear bright straw yellow with greenish tinges.
Aroma: Pleasing impact, typical, fruity and floral.
Taste: Has body, balanced with a mouth-filling almond finish.
Pairing: Excellent as an aperitif, with main dishes of vegetable soup, exceptional with cured meats and aged cheeses.
Serve: At the temperature of +11° to +12° C. Uncork just before serving.
Consumption and ageing potential: Ideal when consumed young. If stored well, its personality improves and it can age for 2 - 3 years.
