Type of wine: Red, dry, Merlot Riserva Friuli Grave.
Producer: Fernando Pighin & Figli S.agr. a r.l.
Grape varieties: Monovarietal Merlot.
Zone of production: Fraz. Risano, Pavia di Udine (UD), Italy.
Soil: Moderately loose-packed, with patches of gravel.
Training system: Single Guyot with 4,000 vines per hectare, bunch thinning to obtain a more structured product which is suited to long development.
Yield per hectare: 65 quintals of grapes per hectare.
Harvest: Grapes harvested by hand in bins during the period of optimal ripeness, 21 - 30 September.
Vinification: With the technique of maceration on the skins in special stainless steel fermentation vessels at the controlled temperature of +10° to +28°C.
Ageing: 8 months in stainless steel vats, approximately 24 months in oak barrels made of a mixture of different woods (Allier, Never and Tronçais) and afterwards 12 months in the bottle before marketing.
Alcohol content: 13,5% by vol.
Residual sugar: 2.50 g/l.
Total acidity: 4.60 g/l in tartaric acid.
Extract: 28 g/l.
Colour: Ruby red with soft garnet hues.
Bouquet: Intense and complex, wild berries, light plum accompanied by evolved notes of minerals and spices.
Taste: Dry, gentle body, balanced, with pleasant richness and delicate tannins.
Pairing: Pairs with dishes with rich sauces, excellent with roasted game or with aged cheeses.
Serve: At the temperature of +18° to +20° C. Uncork and possibly decant half an hour before serving.
Consumption and ageing potential: Wine particularly suited to extended ageing. In the proper conditions it can be aged for 6 to 8 years.
